Many of us are concerned about getting too much sugar in our diets. Sugar enhanced foods like chocolate are high on the glycemic index and too much of it in our diets can cause havoc to our bodies. So if you’re a chocolate lover, it’s tricky because most chocolate treats are made with sugar.
Chocolate is actually made from the cacao bean and the pure cacao bean doesn’t have sugar in it and isn’t sweet at all. It’s a fruit that is high in nutrients and can actually be healthy for us, but it can taste bitter. To avoid sugar in most chocolate, some people buy chocolate made with little or no sugar and high in cacao. It’s usually called dark chocolate, but it can taste somewhat bitter and doesn’t have the sweet taste most of us like.
So how can a chocolate lover get the sweet chocolate taste we crave and still avoid sugar and its high glycemic index problems? Its simple and I have the recipe.
I discovered this from a close friend of mine who suggested I use agave (organic blue agave) to replace sugar in my diet. It’s a natural sweetener extracted from the heart of the agave plant. Its quite low in the glycemic index so it is slowly absorbed into the body preventing spikes in blood sugar, yet it tastes very sweet.
To get the chocolate sweet taste I love, I took a third cup of agave and mixed in 3 – 4 big tablespoons of pure cacao bean powder (like Hershey’s Cocoa natural unsweetened powder) to get the chocolate taste. Voila! It tasted great so I also blended in some of my favorite nuts. Next, I put it in a couple of small containers and placed it in the freezer for a few hours.
When I took it out and tried it, I thought I was eating fudge. It satisfied my sweet tooth yet didn’t give me the bad effects of sugar. I hope you try this yourself and be creative with it. It’s a way to get our chocolate fix without climbing the glycemic index. So enjoy! (If you’re on a special low glycemic diet, always check first with your medical professional about what to eat).
