Yes, believe or not, you can enjoy a chocolate truffle cake that is a confectionary delight but still sugar free, low carb, and even flourless. But why do that? Because many people now suffer from various health issues like diabetics, allergies to wheat and gluten, or fibromyalgia.

In fact, millions Americans live with these ailments, but they still want to enjoy chocolate and eat a slice of cake. Also, almost three-fourths of adults in this country are now overweight and are looking to have fewer carbohydrates in their diets.

But can these flourless, sugar-free, and even low carb chocolate cakes taste good? Yes, in fact, many people agree that they usually taste more moist and dessert-like than regular chocolate cakes.  So we have included it in our Best New Popular Chocolate Cakes series.

A flourless chocolate cake is usually made from aerated chocolate custard and prepared with whole egg foam. It’s heated in a Bain Marie (a French word for a device similar to a double boiler). The low heat from the melting chocolate stabilizes the protein component, which contains only the starch naturally found in chocolate. It’s then baked in the Bain Marie. A Bain Marie is typically used to cook custards to keep a crust from forming before their interior is fully cooked and is used to slowly melt chocolate so it doesn’t scorch.

Another type of cake with little or no flour is the famous molten chocolate cake, which is deliberately allowed to fall. This type of chocolate cake is frequently served in restaurants because it tends to be much richer than regular cakes with a more decadent and dessert-like taste and texture.

Then there’s the delicious classic French gateau au chocolate cake. This cake is a flourless chocolate cake that can be made either with refined sugar and evaporated cane juice. A one-eighth-of-the-cake slice of this delicious cake is only 12 carbohydrates. Its texture is a little more spongy than cakes made with flour, but the taste is delicious and cake like.

Often sugar-free chocolate cakes are made with sugar-free organic bittersweet chocolate. Using evaporated cane juice, which usually can be found as organic powdered sugar, sweetens it if you don’t like the bittersweet taste. Many sugar-free chocolate cakes are lighter than fudge, but are more dense than chocolate cake. And they have a richer taste.

Strange as it may sound, even if you have health issues and can’t normally eat regular chocolate cakes, you may be able to enjoy the new flourless and sugar-free, and even low carb, chocolate cakes. You can have your cake and eat it too.
