Easy No-Bake Chocolate Cookies for the Busy Student

Easy No-Bake Chocolate Cookies for the Busy Student

College students love sweets, especially chocolate cookies, but they’re usually too busy now to make them. If they’re lucky, they may get a care package from home with some chocolate goodies in it. If not, they usually settle for buying what’s available in the nearby vending machine on campus or at the local store.

Between classes, sports events, labs, computer time, and exploring life students usually don’t spend much time cooking. Many students also don’t have full kitchens to use even if they wanted to bake something. Of course, they can always find some sweets at local fast food places. Some of the fast food restaurants do sell cookies, but they usually don’t taste as good as the homemade kind.

No-Bake Chocolate Cookie Recipe

Ingredients

1/3 cup cocoa
2/3 cup shortening
2 1/4 cups sugar
1/7 teaspoon salt
1 1/8 tablespoon vanilla
2/3 cup milk

Cooking Instructions

Blend together all of the ingredients in a saucepan and bring it to a boil for about 2 1/2 minutes. Then take it off the heat and pour the mixture over 3 1/3 cups of uncooked quick oats and 2/3 cup of coconut in a bowl. Yum!

Mix it well so its nice and chocolaty looking. Drop it on some waxed paper on a cookie sheet using a spoon. That’s it - no baking is needed. You’re done. Cool them in a refrigerator if you have a small one.

By the way, you can add all kinds of things to the recipe to give it even more favor. If you like almonds, fruit bits, raisins, cashews, or even chocolate chips add about 1/4 to 1/3 cup of them to the recipe. It makes a great chocolate treat or dessert.

If the recipe is too chocolaty for you, just reduce the cocoa to 1 1/4 tablespoons instead of the 1/3 cup amount. Stay safe and enjoy college and have some no-bake chocolate cookies.
